This just gave me a random thought. I don't know about the
availability of compatible RAM, but the PCB design and production is
well within the capability of some of the people on this list. What
about the casing though - how hard would it be to get plastic
cartridge cases made?

I know many of the Electron ones were metal cased, but often they also
used the width of the Electron's wider slot, so wouldn't go in
backwards.
