You're right, to date only 16MB and 32MB options have been offered for sale
so the only 64MB board is the one on my desk to my left.
To get 64MB of RAM instead you 

 * Need to check you're running ARM Tube OS 0.35 or later, since the new
   RAM detection and setup code was introduced then. Earlier versions would
   only bother refreshing one bank so half the RAM would be missing if you
   fitted anything other then 16MB or 32MB. It also supports 8MB.
 * Order yourself a MT48LC32M16A2TG-75 for ?18.62+VAT from Digikey
 * Desolder the old chip and solder in the new
