I remember a utility that claimed to handle pretty much everything
tape-to-disc wise, but for the life of me I cant remember the name (it'll
come to me). Only thing is, it wouldn't do one of the trickier tape
protections which involved modifying the baud rate of the incoming data.

I have a Replay, but I only got one sheet from them in the end. I do
recall at the same time there were folk making pirate versions of the
Replay hardware!
