You could hunt around for the missing matching 'top bit' to the connector -
these have a series of slits in them which line up with the 'V's which you
describe and will force the IDC cable over the connector and slice through
the insulation properly.
Alternatively, it's not hard to replace the entire header with suitable
tools. A surface mount hot air gun and condenser nozzle will get it out in
one piece, then heat it up again and bash the board on the desk and all the
excess solder will fall out,
