I wonder if that's where I'm going wrong because I've tried just about everything
(with the BBC
host adapter as well) from parity enabled, parity disabled, terminators on,
off, powered from the
drive, SCSI bus etc etc etc and nothing ever happens apart from the odd melting
SCSI cable which
thankfully hasn't happened for a while now.

How would I know if a drive supports 256 bytes per sector; I'd have to download
the manual I
suppose.

It should "just work", provided the drive supports 256-byte sectors.
You'll need the formatter utility that formats the disk over the Econet.
