I use a 6502 co-pro with DFS 2.26 -- the tube code is in there too.

As for blowing eproms, this is what I do.

I use a Genius NSP universal programmer (works with Windows via a serial
port) bought on Ebay for around £35 inc postage (checks: there are
several on Ebay at the moment, see e.g. Ebay item #5834297970): this'll
blow anything.  The software is in broken English, but you can figure it
out, and everything works OK.

I bought some Atmel eeproms (AT28C256 -- about £5 each).  These are 32K
eeproms that just plug straight into the BBC rom sockets once
programmed.  As eeproms, they are a doddle to re-program -- no UV to
mess with.  Use the software to program the ROM image into the top half
of the eeprom, as that is where the BBC will look.  Easy as pie.
