Another possible option might be to use something like an Archimedes
400-series, which has an MFM controller on the motherboard, and some
software to dump the disk off. I don't know if something to do that
already exists or not.

Another advantage of that might be being able to use Ethernet to
transfer a resulting image file, although that may need a larger IDE
disk as an intermediary store for the file.
