After all this, I have found the "proper" solution. (It is on the BeebEm 
website - so sheepish admission that I didn't RTFM!)

What you do is rename the 720kb or 360kb image, giving it a ".dos" 
extension. BeebEm will then recognise it as a DOS disk.
