To start X in 256 cols (8bbp), use

startx -- -bpp 8

As well as xbeeb, try BeebEm, I use it under Linux and it works a treat.
Suffers from the same 8bpp problems though :-)

I've got some RPM's of it somewhere, mail me if interested.
