Further to Tims tip,
I have a block of wood that has chassis mounted sockets for all the
connectors that I use mounted in it. Not only does this keep the pins in
line, but it also stops the connector from wandering around the workbench
while you're soldering it.

Another tip that I have found useful is to rummage around in the junk
box for a socket to accept the plug you are wiring (or purchase one when
buying the plugs). Clamp this into the vice, then push the pins of the
plug into the socket. Even if the plastic does become soft under the
heat of the iron, the pins should remain in their correct places.
