Not  all of them do that; a lot of them rely on the host - Samsung are
pretty  good at having open source drivers/specs available; so the
printers are  dumb but drivers are available for a lot of things.
(Although I'd admit  that driving them off a Model B would be 
a  challenge!).





I still think that there is a market for a small box running Linux which  
could be plugged into a parallel port and would accept plain text.  It  could 
then convert it using one of the Linux printer drivers and send it out via  USB 
or parallel port.
 
The driver needed for the particular printer could be uploaded to the box  by 
sending a signal up the parallel port first, or maybe via a serial port  
connection.
 
All we need is someone to design and build it !!
