Simplest thing would be to put a variable resister in one of the
leads to the speaker, and mount it so that the control sticks out
of the side of the case.
 
If you look inside the Beeb you will see:
 
Speaker+-----------------------***  IDC
       +-----------------------***  Plug
 
Make a cut in one of the wires and extend it to a variable
resistor:
 
Speaker+-----------------------***  IDC
       +-------+   +-----------***  Plug
               |   |
               |   |
    /\/\/\/----+   |
       ^           |
       +-----------+
